Spinach Artichoke Dip

A creamy delicious dip; this Spinach Artichoke Dip is perfect for parties, pot luck or to just enjoy with bread and wine!
An easy recipe that comes together super quick, this dip is SO good with all kind of dippers!

Ingredients

  • 2 ½ cups spinach (chopped)
  • 1 cup artichoke hearts
  • ½ onion (diced)
  • 2-3 cloves garlic (minced)
  • ¾ cup Mayonnaise
  • ¾ cup whipping cream
  • ¾ cup cheese (shredded)
  • 3 tablespoon cream cheese (room temperature)
  • 1 teaspoon salt
  • 1 teaspoon pepper powder
  • 2 teaspoon oil

Instructions

  • In a pan add oil. Once it heats up add garlic.
  • Let the garlic sauté till it is fragrant. Then add onions.
  • Cook the onions till the raw flavor vanishes.
  • Then add chopped spinach.
  • Cook till the spinach wilts. Turn down heat and set aside.
  • In a mixing bowl add whipping cream, mayonnaise, cream cheese, cheese, salt and pepper.
  • Mix everything well.
  • Next add the spinach mixture and quartered artichoke hearts.
  • Mix everything till the spinach is spread into the mix evenly.
  • Transfer to a heat proof dish and spread it evenly.
  • Add the remaining shredded cheese and set to bake at 350 F for 25-30 minutes. Once the cheese starts to brown and the sides are bubbly; remove from the oven.
  • Serve with your favorite crackers, toasted baguette, chips etc.

Notes

  • Use a block of cheese and shred it instead of pre-shredded cheese. The block cheese tends to melt really well to get the creamiest dip.
  • To make the dip lower in fat, switch whipping cream for half and half. The dip will not be as creamy but it will still work.
  • The same dip can be made with frozen spinach. If doing so, the spinach does not need to be cooked. It can be added directly into the cream mixture.
  • Artichokes here can be canned or marinated. Both of these work equally well.
