In a pan add oil. Once it heats up add garlic.
Let the garlic sauté till it is fragrant. Then add onions.
Cook the onions till the raw flavor vanishes.
Then add chopped spinach.
Cook till the spinach wilts. Turn down heat and set aside.
In a mixing bowl add whipping cream, mayonnaise, cream cheese, cheese, salt and pepper.
Mix everything well.
Next add the spinach mixture and quartered artichoke hearts.
Mix everything till the spinach is spread into the mix evenly.
Transfer to a heat proof dish and spread it evenly.
Add the remaining shredded cheese and set to bake at 350 F for 25-30 minutes. Once the cheese starts to brown and the sides are bubbly; remove from the oven.
Serve with your favorite crackers, toasted baguette, chips etc.
