Roast purple sweet potatoes with some oil on them at 425 F for 45 minutes.

Peel, mash with a fork and set aside.

Add flour, mashed potato, bloomed yeast, salt and unsalted butter to a stand mixer bowl.

Knead to a smooth dough with the dough hook and remove from the bowl.

Place the bread dough to rise in a greased bowl for 60 minutes.
