Falsa Sharbat | Phalsa Juice

Ingredients

For the sharbat

To serve

  • 2-3 sprigs mint leaves
  • 1 lemon (sliced)
  • 1 cup ice cubes

Instructions

  • Add the thawed falsa berries (if frozen) or fresh berries to a blender.
    2 cups falsa berries
  • Then add in sugar.
    ¼ cup sugar
  • Also add in water.
    2 cup water
  • Blend till the berries are processed.
  • Transfer the blended berries and water to a strainer.
  • Strain out the seeds and gritty peels.
  • In the bowl with the syrup, add all the spices and lemon juice.
    1 teaspoon rock salt, ¾ teaspoon black pepper powder, ¾ teaspoon roasted cumin powder, ½ lemon
  • Mix well and add water to make the consistency right. Set aside or in the refrigerator till ready to serve the drink.
  • In a glass add in ice cubes and a slice of lemon.
    1 lemon, 1 cup ice cubes
  • Transfer the sharbat into the glass. Serve with mint leaves and more lemon slices.

Notes

  • Do not skimp on falsa: The main flavor in the drink comes from the falsa berries. So do not skimp on them. Adding fewer berries will yield to a sweet drink thanks to the sugar but not necessarily rich in the fruity flavor. Add them as per the proportions in the recipe.
  • Do not blend at full power: The recipe works best in a low speed blender or a high speed blender used at half the power. Processing the berries at full power will crush the seeds and make the drink gritty.
  • Try and add all the spices: The addition of rock salt makes the drink salty, lemon gives freshness and sour flavor, pepper adds a hint of spice and roasted cumin is great for the earthy flavor. Try not to skip any of these in the drink.
  • Make it fizzy: To make a fizzy version, reduce the water to half. After the sharbat has been extracted, add that over ice only to fill half the glass. Top off with sparkling water.
  • Handling fresh falsa: Fresh falsa does leave a dark pink stain very easily. It is best to handle them using a pair of hand gloves.
  • Never cook the berries: The beauty of the berries is in the bright pink color. This only comes when the berries are used raw. Cooking them will result in a dark brown color which is not very appetizing.
