Litchi Ice Cream
An easy to make tropical fruit dessert; this litchi ice cream comes together with just 4 ingredients and does not need an ice cream machine. Fruity, delicious and easy to make!

Peel and deseed the litchi. Add it to a blender jar.
Add milk and process till smooth. Set aside.
In a large bowl add condensed milk and heavy whipping cream.
Blend till the mixture thickens using a hand held blender or stand mixer fitted with a balloon whisk.
Then add the blended litchi mix and whip it in.
Transfer to an ice cream container and freeze for 10-12 hours. Remove and serve using an ice cream scoop.
- The recipe works the best with fresh litchi. However, use frozen or canned litchi if fresh is unavailable.
- As the season for litchi is short lived, you can peel, deseed the fruit and freeze it for future use. Frozen litchi is not a treat to eat but works well in ice creams and shakes.
- Make a big batch or a small one, the recipe works well. Maintain the proportions when scaling up or down.
- The same recipe will work in the ice cream machine too. However, add the litchi milk mixture as the ice cream begins to form.
- While full fat cream works best for the recipe, use lower fat cream if you desire. The end result will not be as creamy but still works.
