Papdi Chaat Dip
A variation of the classic seven layer dip; this Papdi Chaat Dip has all the flavors of chaat in a dippable form. Serve it with papdi, chips or just enjoy with a spoon!

In a bowl add Greek yogurt, sugar and chaat masala.
Mix well and set aside.
In a bowl add an even layer of seasoned yogurt. Spread it out.
Next, add diced onions.
Then add the sweet tamarind chutney.
Finely diced tomatoes go in next.
Next we add cilantro chutney followed by diced potatoes.
Then we add red garlic chutney.
We top this with sev or bhujia.
Finally, we top with diced green mango, pomegranate, cilantro and chaat masala.
- The dip is best prepared a couple of hours before serving. As it stands, the chutneys make the veggies perfectly moist. It stays well for 24 hours.
- I like to make this dip in a clear glass shallow container. That way the dish is a true visual treat! Make in any container of your choice.
- Serve this with papdi, tortilla chips, potato chips etc. The same dip can be served in chaat baskets too.
- Adjust the amount of veggies and chutneys as per your taste. The dip can be made spicy, medium or less spicy.
- The chutneys should be slightly thick. If it is runny, the layers will all mix in.
