Chaats are one of the best cuisines. Full of everything sweet, spicy and tangy ingredients, it is perfect for a meal or a snack.
From Pani puri and bhel puri to sev puri and ragda pattice, we love them all. Each one of these has its unique set of ingredients and textures.
All of these chaats are super popular on the streets of Mumbai. And once you have had it there, it is difficult to forget the taste and flavor.
Papdi Chaat is one such recipe from Mumbai. Crisp puris or papdi topped with crunchy vegetables, colorful chutneys and all the crispy toppings. These papdis are always super delicious and yet so easy to make.
Inspired by this popular chaat I have this layered dip. Each layer is a topping of papdi chaat and when this is scooped onto papdis, we have the entire papdi chaat!
What is Papdi Chaat Dip
An Indian take on the classic seven layer dip, this one is a fun recipe to make and eat.
To make this we get together all our favorite chaat ingredients and then enjoy layering them all up.
Sweet dates tamarind chutney, spicy cilantro chutney and garlic chutney, all the different veggies cut into cubes and toppings. These along with sweetened yogurt make the most ultimate combination in each bowl.
While this dip is a shareable one, it is also great to make single serve portions for each guest at a party. They definitely look pretty chic that way.
Plus, this way you can taste all the flavors of Papdi Chaat without soggy papdis! The crisp papdis with chilled chaat is perfect in every way.
This Recipe of Papdi Chaat Dip
- Comes together in under 10 minutes once you have the chutneys ready. And this quick dip is great for parties or impromptu gatherings.
- Works best if you chill the dip without the topped sev for 30-60 minutes before serving. That way the vegetables become soft from the chutneys. Finally top with the crunchy elements and serve.
- Is easy to customize and super versatile. Add the vegetables you like and skip the ones you do not enjoy. The same applies to chutneys. Vary the proportion based on preference.
This dip has been popular among our friends and family members. We have been making it for a long time now. However, each time I switch the chutneys and the vegetables to make a new combination.
Serve this for a party or enjoy it as a quick appetizer or snack. This dip is a worth a try for the upcoming Diwali parties too.

Ingredients
Yogurt: For the recipe we start with seasoned Greek yogurt. To make this I like to add sugar and chaat masala to the yogurt and use it. Skip the sugar if you do not want a sweet version.
Greek yogurt makes the dip thick. Moreover, regular yogurt will be too runny for it. However, if using regular yogurt, hang it in a muslin cloth for 30 minutes before proceeding.
Adding more spices like red chili powder, amchur, mint powder etc works too.
For an easy Vegan version, simply replace dairy yogurt for a non-dairy yogurt. It will work out fine.
Veggies: For the crunch element we add layers of finely diced vegetables. I like to use pink onion, tomatoes, boiled potatoes and green mango.
Moreover, we add chopped cilantro on top. Finally, one can add some finely diced green chili too.
Chutneys: This dip will taste the best when we have all the three chutneys in it. I like to make my own using these recipes: Sweet Dates Tamarind Chutney, Spicy Cilantro Chutney.
The sweet dates tamarind chutney gives the dip a great taste and the spicy cilantro chutney is perfect for a pop of color and flavor. Finally the zingy garlic chutney. This red chutney is amazing for taste in the dip.
These can be made at home or used directly from the bottled versions at the store.
Toppings: The dip is super versatile and can be topped with your favorite crunchies. Sev, bhujia, boondi, crushed papdi and even tortilla chips make the perfect topping for the recipe. I prefer bhujia over sev as sev will get soggy really quickly.
This dip is served with papdi traditionally. However, tortilla chips, potato chips or any chips of your choice can be used for it.
Step by Step Instructions to make Papdi Chaat Dip
1- In a bowl add Greek yogurt, sugar and chaat masala.
2- Mix well and set aside.
3- In a bowl add an even layer of seasoned yogurt and spread it out.
4- Next, add diced onions.
5- Then add the sweet tamarind chutney.
6- Finely diced tomatoes go in next.
7- Next we add cilantro chutney followed by diced potatoes.
8- Then we add red garlic chutney.
9- We top this with sev or bhujia.
10- Finally, we top with diced green mango, pomegranate, cilantro and chaat masala.
Tips and Notes
- The dip is best prepared a couple of hours before serving. As it stands, the chutneys make the veggies perfectly moist. It stays well for 24 hours.
- I like to make this dip in a clear glass shallow container. That way the dish is a true visual treat! But, it can be made in any container of your choice.
- Serve this with papdi, tortilla chips, potato chips etc. And, the same dip can also be served in chaat baskets.
- Adjust the amount of veggies and chutneys as per your taste. The dip can be made spicy, medium or less spicy.
- The chutneys should be slightly thick as with runny chutneys, the layers will all mix in and the dip will not look clean and crisp.

- ¼ cup Greek yogurt

- ½ medium tomato (diced)
- ½ medium potato (boiled and diced)
- ¼ medium raw mango (diced)
- ¾ cup Dates Tamarind Chutney
- ½ cup Cilantro Chutney
- ¼ cup Garlic Chutney
- ¾ cup Bhujia
- 2 tablespoon Pomegranate Arils
- 3-4 stalks cilantro
Instructions
