Chaats are super popular in India. A mix of crunchy, sweet, spicy and tangy ingredients; every chaat is unique in it's own way.
Every city and state have their favorite chaats. From Pani Puri and Dahi Bhalla to Samosa Chaat and Ragda Pattice; we enjoy all of these and more.
These chaats use a base that derives the name for it. And then we add chutneys, vegetables, crunch elements, masalas etc. Together with ingredients like yogurt; it makes a colorful, delicious mix of ingredients.
What is Kachori Chaat
After enjoying this chaat for a long time, it is finally up here!
We start with Mini Khasta Kachoris. These fried bites of goodness are filled with a sweet, spicy masala and come in bite size.
On these mini bites we add some diced veggies, colorful toppings, flavorful yogurt and chutneys.
However, the toppings can be modified based on preferences. Add all the chaat elements you enjoy and skip the ones you do not eat. This recipe is super forgiving and easy to customize.
Once the topping is complete, serve immediately. As we use thick kachoris instead of puris, these do stand well for a longer time without getting soggy.
Moreover, the sweet and spicy masala of the kachoris, the crisp cover and the toppings make a delicious combination together!
This Recipe of Khasta Kachori Chaat
- Makes a great appetizer for any party. Moreover, it doubles as a quick snack.
- I like to make the entire recipe and serve on a platter. However, the elements can be served separate and the guests can assemble these as per taste too.
- Is super easy to put together. Just collect all the chaat elements, the kachoris and have a great dish in minutes!
- While I make this with bite size kachoris for a single bite version; the recipe will work well for large kachoris too. Just break the kachoris into pieces and proceed the same way as described.
We have been loving various versions of the recipe with yogurt, without yogurt, with ragda, with chole etc. However, make the one that your family will enjoy the most!

Ingredients
Mini Khasta Kachori: This is the base for the recipe. Available at the Indian store, this one is delicious as is and even better in a chaat.
In case you cannot find them, either make it at home or get regular size kachoris. If you have the regular ones, cut them into pieces before making the chaat.
Chutneys: For this chaat we use Sweet dates tamarind chutney, spicy cilantro chutney and garlic chutney. These make a great combination of sweet, spice and tangy.
Make the chutneys at home or buy them from the store. If making at home, they can be prepped a day before.
Vegetables: For this chaat we use onions, tomatoes and cilantro. Plus, boiled potatoes, raw mango and cucumber make great additions too.
Yogurt: Plain yogurt with sugar and chaat masala makes the recipe super delicious. It is great addition to the chaat.
However, skip the yogurt to make the recipe Vegan.
Chaat Masala: Adding chaat masala and red chili powder is perfect to make the recipe. Skip the chili powder if you do not like it in chaats.
Toppings: Sev, pomegranate and cilantro make great toppings for the recipe. Apart from these, sprouted moong, spicy chana dal or even papdi would be great!
Step by Step Instructions to make Khasta Kachori Chaat
1- In a bowl add yogurt, sugar and chaat masala.
2- Whip till it comes together to a smooth mix. Set aside.
3- In a plate arrange the mini kachoris. Make a hole in the top covering but not through the entire kachori.
4- Add diced onions and tomatoes in each kachori.
5- Then add the seasoned yogurt to each kachori.
6- Next add the three chutneys as per taste.
7- Then we add the toppings like sev, pomegranate, cilantro, chaat masala and red chili powder.
8- Serve immediately.
Tips and Notes
- The recipe is best enjoyed fresh. Once made, it starts to turn soggy because of the yogurt and chutneys. If serving at a party, assemble this last.
- This version is made using whole kachoris as they are tiny. If using full size kachoris, cut it into pieces before assembling the chaat.
- The toppings can be changed based on preferences. I have used the ones most people enjoy with their chaat recipes.

Ingredients
- 13-15 Mini Khasta Kachoris
- ½ cup Sweet dates tamarind chutney
- ⅓ cup spicy cilantro chutney
- ¼ cup garlic chutney
- ½ cup yogurt
- 2 teaspoon sugar
- 1 teaspoon chaat masala
- ½ medium onion (diced)
- ½ medium tomato (diced)
- ½ cup pomegranate arils
- ½ cup sev
- 1 teaspoon red chili powder
- 4-5 stalks cilantro
