- 3 medium russet potatoes
- 3 teaspoon neutral oil (I used Avocado Oil)
- 1½ teaspoon coarse salt
Wash, scrub and pat dry the potatoes. Using a fork prick holes in a few places.

Drizzle a teaspoon of oil on them and rub the oil to coat the potatoes evenly. Season with coarse salt or garlic salt.

Preheat the air fryer to 400 F. Once hot, place the potatoes in the basket and cook for 40 minutes, turning once around the 20 minute mark.
After 40 minutes check of they are fork tender. If they are; remove using a pair of tongs and set on a plate. Slit them lengthwise and fluff with a fork.
Serve the baked potatoes with salt, pepper butter or add toppings of your choice.
- Use a high-smoke oil: As we heat the air fryer with the potatoes to 400 F; we need an oil that has a high smoking point. Popular options include like avocado and vegetable oil. Ghee works well too; just that the recipe does not remain Vegan.
- Do NOT wrap the potatoes in foil: Wrapping the potatoes in foil will steam the potato skins and make them soggy rather than have a crisp skin. So do NOT wrap them at all before air frying them.
- Don't overcrowd: If the potatoes are touching, they will steam each other. Leave at least an inch of space between them.
- The Rack Trick: If your air fryer came with a metal rack, use it! Elevating the potato allows air to hit the bottom more effectively, often eliminating the need to flip them halfway through.
- Using sweet potatoes: It is easy to switch potatoes with sweet potatoes. Simply air fry them for 40 minutes at 375 F. These will be thicker and custard like rather than light. They are perfect carriers for savory and sweet toppings.
