Unlike boiling or steaming, which saturates the potato with water, baking dehydrates the skin while the natural moisture inside the potato turns into steam. This process creates a distinct contrast in textures that has made it a staple comfort food across the globe.

- Salt: I use sea salt crystals for the recipe. However, use any salt you have at hand. Coarse salt tends to stick in parts and fine salt will spread more evenly.

How to make this recipe
1- Wash, scrub and pat dry the potatoes. Using a fork prick holes in a few places. Drizzle a teaspoon of oil on them and rub the oil to coat the potatoes evenly. Season with coarse salt or garlic salt.
Pro Tip: Dry the potatoes well. Any leftover drops of water will steam the potato skins rather than crisping them.
2- Preheat the air fryer to 400 F. Once hot, place the potatoes in the basket and cook for 40 minutes, turning once around the 20 minute mark.

3- After 40 minutes check of they are fork tender. If they are; remove using a pair of tongs and set on a plate. Slit them lengthwise and fluff with a fork.
4- Serve the baked potatoes with salt, pepper butter or add toppings of your choice.

- Don't overcrowd: If the potatoes are touching, they will steam each other. Leave at least an inch of space between them.
- The Rack Trick: If your air fryer came with a metal rack, use it! Elevating the potato allows air to hit the bottom more effectively, often eliminating the need to flip them halfway through.
- Using sweet potatoes: It is easy to switch potatoes with sweet potatoes. Simply air fry them for 40 minutes at 375 F. These will be thicker and custard like rather than light. They are perfect carriers for savory and sweet toppings.
