Why use Sweet Potatoes
Sweet potatoes are the lesser popular variety of potato compared to russet or white. They are not mainstream but their nutrients are actually so good for you!

Sweet potatoes have lower in starch compared to their cousins in the spuds family. Thus, they do not need any soaking before making the fries.
These spuds are popular for many chaat recipes and curries. Using them for fries is common but highly underrated. In fact, they are the perfect candidate for crispy fries.
For those who fast, sweet potatoes are a great way to enjoy a meal without too much starch and fat. And yes, not to forget the nutrients that are packed in each of the sweet potatoes.

Ingredients and Substitutions
- Sweet Potatoes: The first ingredient here is sweet potatoes. The orange ones work really well for this recipe. The white ones tend to be drier and yield chewy fries. Try and pick the potatoes from the same store as each batch tends to vary in cooking time.
- Oil: An essential ingredient for crisp fries. I like to use Olive Oil for the recipe. However, any neutral oil will work well.
- Seasoning: Once we have the potatoes and oil, all we need is the seasoning. I like to keep them simple by just adding salt and garlic powder. More seasonings like paprika powder, ground pepper, peri-peri or even garam masala taste great on these fries. I tend to use them sometimes for an extra zing and flavor.
- Some fresh ingredients like diced garlic, basil or oregano can be used too. Just add them mid-way through the air-frying to ensure they do not burn.

How to make this recipe
1- Wash the potatoes and pat them dry.
2- Cut the ends of the sweet potatoes and slice them into ¼ inch thick slices.
3- Then cut the slices into ¼ inch thick fries. Ensure they are equal in size to ensure even cooking.
4- Transfer to a bowl.
5- Then add oil, garlic powder and salt.
6- Toss the fries till they are coated well with the seasonings.
7- Then place the fries in the air fryer tray. Ensure they are in a single layer and do not overlap. Place them in a preheated air fryer set to 170 C/ 375 F.
8- Flip them mid-way through the cooking and air fry for about 12-14 minutes in all. And serve immediately with ketchup, hot sauce or a dip of your choice.
Expert Tips and Notes
- Cut the potatoes into fries of similar size; as this ensures they cook evenly.
- The skin of sweet potatoes is edible and full of fibre. However, it is optional to keep them on or peel the potatoes before using.
- Do not overcrowd the basket. Air-fry them in batches if required. They tend to stick together or become soggy when overcrowded.
- The fries can be tossed in corn starch for an extra crisp layer. I generally do not do this.
- Serve them immediately. The fries tend to get soggy in some time so they are best enjoyed within 30 minutes of air frying. However, if required; to reheat, simply place in a hot air fryer for 2-3 minutes and serve.
- While I use the air fryer to make the fries, the same potatoes work for deep frying too.
