    A great way to enjoy a protein rich dessert thats easy to make in 10 minutes of active time with just four ingredients!

    Who does not like popsicles? Especially the ones that are homemade, fresh and full of flavor. While we enjoy a myriad of fruity and milk based popsicles, here is something that is slightly tangy, sweet and super easy to make. These mango popsicles and cutting chai popsicles are definitely great to try.

    Shrikhand; a classic Indian dessert made with yogurt and flavored with various nuts, seeds and often fruits. This dessert is often the first stop for dessert lovers! If you would like to try some shrikhand recipes, this Kesar Shrikhand is a keeper!

    When the two combine; we get a super delicious dessert that is perfect for any party, get together and festivals. Shrikhand popsicles bring together shrikhand and frozen desserts in one. And it is a winner in every age group!

    What are Rose Shrikhand Popsicles

    If you are a Shrikhand lover, you would have come across rose shrikhand. Floral, chilled yogurt that may be topped with nuts, dried rose or just silver varakh.

    When this shrikhand is frozen, we get a delicious dessert; Rose Shrikhand Popsicles!

    And when you serve it at a party, everyone enjoys it for sure. Parents would not mind their kids enjoying a protein rice dessert made from Greek Yogurt and adults would love this frozen treat as well.

    While technically it is frozen shrikhand, we do make a couple tweaks to make these popsicles. Read on to find out!

    Why this recipe works

    • This recipe comes together in just 10 minutes of active time. The remainder time is to freeze the popsicles.
    • It is a great way to enjoy shrikhand in a whole new way. Super cold, frozen and yet just as delicious as the traditional shrikhand.
    • I use rose to flavor the yogurt, but saffron syrup, khus syrup are also great. Plus, adding nuts, seeds and edible glitter to the recipe is an option.
    • It is delightful, flavorful and rich in protein given that it is made with Greek yogurt! Though we add some sweetener; this dessert is definitely on the healthier side of the dessert spectrum.
    • I like to make this recipe in silicone molds. They are smaller in size than traditional pops and really easy to un mold. The traditional molds often require running them in warm water to de mold but silicone mold can be de molded by just pressing the popsicles out. Here are the popsicle molds that I use in this recipe!

    Ingredients and Substitutions

    Ingredients for rose shrikhand popsicles; rose syrup, yogurt and add-ins on a slate platter.
    • Greek Yogurt: This is the main ingredient in the recipe. We use Greek yogurt as it yields super creamy and delicious popsicles. Plus, it has a higher protein content than regular yogurt. If using regular yogurt, tie in a muslin cloth and hang till the water content drains and the yogurt is thick. Then use it to make the popsicles.
    • Rose Syrup: To get the bright pink color and rose flavor, we use the syrup. My personal preference is always this rose syrup brand but there are plenty of brands available. Pick the one that you like the best.
    • Maple Syrup: We need to add a small amount of sweetener to the recipe. I like to use maple syrup as it mixes with the cold yogurt quickly. Use honey, sugar or any other sweetener as you like. Skip the sweetener to make the popsicles less sweet.
    • Cardamom seeds: A classic ingredient for Shrikhand, cardamom seeds are great for texture, flavor and taste. Skip them or substitute with nutmeg if you like.
    • Adding some nuts like almonds, pistachios, walnuts etc works too. Plus, adding some dried or fresh rose petals is a great idea.

    How to make this recipe

    1- In a bowl add Greek yogurt.

    2- Add rose syrup, maple syrup and cardamom powder.

    3- Mix well till the pink color is consistent throughout the yogurt.

    4- Then divide the mixture among 6-7 popsicle molds.

    5- Add the sticks and freeze overnight.

    6- Slowly un mold the popsicles, top with edible glitter and confetti and enjoy immediately! Alternatively, transfer to individual plastics or on parchment paper and freeze till ready to serve.

    Expert Tips and Notes

    • Use Greek yogurt for best results. Regular yogurt yields popsicles that have water frozen to ice. Thus, they will not make perfectly smooth popsicles.
    • To change the flavor, add other syrup like saffron, khus khus etc. This makes different flavor shrikhand popsicles.
    • Remember that sweetness mellows down as the popsicles freeze. So if the mix tastes slightly sweet, it will be perfect once frozen!
    • These popsicles stay well when stored in airtight container in the freezer for 4-5 days. Alternatively store them in individual plastics or on parchment paper and freeze till ready to serve.

    Yes certainly. Swap the regular yogurt with plant based yogurt to make them Vegan. Maple syrup is Vegan and so that works fine.

    Can these popsicles be made with other flavors?

    Yes these popsicles can be made plain, with saffron, khus khus, mixed nuts etc. They all work wonderfully with yogurt.
