Inspired by two amazing street foods on Mumbai; this ten minute recipe of Sev Puri Sandwich is delicious, easy to make and packed with flavor.

Street food is of the favorites in Mumbai. This city is full of various street food vendors across its streets and landmark sites.
From chaats to masala khichiya and various kinds of dosas and vada pav; these are hard to miss in the city. Whenever we visit Mumbai we are sure to try out all the favorite street eats.
From all the various offerings, chaat is undoubtedly the most popular street food. It comes in various forms including pani puri, sev puri, ragda pattice and so on. These are the traditional ones that have been popular for years.
Now that the food scene is changing massively in the city, there are fusion chaats available too. Pani puri wih various kinds of pani options, avocado sev puri and so on. Today's recipe is something that is available there and we did chance upon this Sev Puri Sandwich at an Indian restaurant here in the US too.
Ever since we had it, it has been on our menu and we do enjoy multiple rounds of this each time. It is undoubtedly our 'new' favorite sandwich and I loved having it over and over again to perfect it to post it here.

What is Sev Puri
Starting from the heart of the sandwich; Sev Puri. This chaat recipe includes puris (papdi) topped with diced onions, tomatoes, potato and colorful chutneys. Plus, there is lots of sev, chaat masala and cilantro.
Together, these ingredients are perfect for a pop of color, a true blend of flavors and super amazing together.
Mostb places serve Sev Puri as a plate of six puris loaded with all the ingredients. And it is amazing that the sandwich I make uses six puris too. It can easily translate to a blend of sandwich with a plate of sev puri!
We use this popular sev puri to build our sandwich. Apart from the regular sev puri ingredients we only need bread and butter. Plus, once grilled, the sandwich elevates the sev puri to a new crispy high!
Why this recipe works
- This recipe is super easy to put together. Once the veggies are chopped and the chutneys prepped, it only takes ten minutes from start to finish.
- I like to use a blend of home-made and store bought ingredients for the recipe. For instance; two of the three chutneys are made at home and the garlic chutney is store bought. Plus, the veggies are chopped fresh while the sev, puri and bread are store bought.
- The recipe is best when fresh. It does get soggy in some time and loses its crunch. So the best way to meal prep this is to prepare the ingredients before hand but assemble and grill the sandwich just before serving.
- I have only used the traditional ingredients from sev puri; however, more vegetables like cucumber, raw mango, beets etc can be added too.
Inspired by two of Mumbai's favorite street food; this recipe is a blend of sweet, spicy and crunchy elements. It is a must-have for any street food themed party or just weeknight dinner.
Ingredients - Notes and Substitutions
- Bread: Use your favorite bread for the recipe. We generally prefer whole grain bread and this works wonderfully in the recipe. However, white bread and sourdough bread will work too.
- Puri: The base of sev puri is wheat or all purpose puris. We use about 6 puris in each sandwich. Store bought is great but they can be made at home too.
- Vegetables: Like the traditional sev puri recipe we use diced onions, tomatoes, potatoes in this recipe. Plus I add some cilantro and lemon juice.
- Chutneys: The three chutneys of chaat are required here. I generally use homemade sweet dates tamarind chutney, store bought garlic chutney and homemade cilantro chutney. Together these work like magic for taste, flavor and color.
- Sev: We add a lot of thin sev to the sandwich. This will crisp up further on toasting and makes a delicious filling.
- Other than these I spread some butter on the bread and for toasting the sandwich. Also, some chaat masala makes the sandwich perfect.

How to make this recipe
1- On a slice of bread spread some butter and cilantro chutney.
2- Place puris on it in a single layer.
3- Top with diced onions, boiled potatoes and tomatoes.
4- Sprinkle some chaat masala and cilantro on it.
5- Add some sweet dates tamarind chutney and garlic chutney.
6- Then add some thin sev on top.
7- Place another slice of bread with butter and cilantro on it.
8- Spread some butter on top and toast till crisp.
9- Spread some more butter on top, sprinkle sev and chutney.
10- Cut into pieces and enjoy with ketchup and cilantro chutney.
Expert Tips and Notes
- Chop the vegetables evenly and as fine as possible. That way they layer easily in the sandwich. Deseed the tomatoes for best texture in the sandwich.
- A sprinkle of chaat masala makes the sandwich amazing. It is an essential element in sandwiches and chaats and when we make something with both, we want to add chaat masala for sure.
- The sandwich tastes best with salted butter. Indian sandwiches tend to be better with Amul butter and that stands true for this one too. If you cannot find that, use another salted butter.
- Sev Puri Sandwich is best when toasted or grilled. The raw vegetables do not make the sandwich as great.
- Adding cheese is an option too. Some shredded or sliced cheese would be great in the sandwich.

- 4 slices bread (brown or white)
- 2 teaspoon butter
- ¼ cup cilantro chutney
- 2 tablespoon sweet dates tamarind chutney
- 1 teaspoon garlic chutney
- ½ medium onion (diced)
- ½ medium tomato (diced)
- ½ medium potato (boiled and diced)
- 12 puris
- ½ cup thin sev
- 1 teaspoon chaat masala
- ½ lemon (juiced)
- 4-5 stalks cilantro (chopped)
Instructions
